Distillation-The Hybrid still
The addition of a rectification column can allow the distiller to produce distillate with an abv beyond 80%, The more trays that are included in a column, the higher the abv that can be achieved. Each tray is in itself, a single disdtillation.
Pot still size: Hybrid pot stills are available in a variety of sizes from 50L to 5000L.
Configurations:
Hybrid pot stills can be built either of copper or stainless steel. When built from stainless steel, the bottom and side shell of the pot are made of stainless, while the top of the pot is built from copper and welded together.
The Hybrid pot still can be build with various head designs, depending on the spirits being produced. The tray quntity in the rectification column is dependent on the desired ABV of the final distillate.
The condenser, which cools the vapour to liquid, is of a shell and tube design and can be built from either copper or stainless stee.

ceiling heights
for planning purposes, smaller systems of 5-10 barrels should consider ceiling heights of 12' to 15' in brewhouse and cellar areas.
Microbreweries and production breweries will require additional ceiling heights due to the large sizes of the vessels.

Drainage
drains are required in the brewhouse, fermentation, walk-in cooler (if applicable), boiler room, and any other area where water and spillage may occur (e.g. kegging/bottling).
floors should have a recommended pitch of 1/4" per foot towards drains.
we recommend channel drains with stainless steel of fiberglass grating.All drains should be sized adequately to handle 4-6 barrels of effuent of every 1 barrel of beer produced.
Water
Main water supply to your brewery is recommended to be 60 psi@25-30 GPM. uniform water flow to the brewhouse is critical and should not be affected by water demand elsewhere in the building.
Hot and cold hose bibs are required in all brewery spaces and lab areas.
If kegging or bottlingwill be done, a water supply will be needed in these areas.
Filtration may be necessare for city water. A water analysis will determine if a filter is required.
